Paitin Barbera Serra Boella 2016

Paitin 2011 Serra Barbera d’Alba DOC, Piedmont | 13.5% | A gastronome’s delight, this is just the red for all things bright and beautiful about a heavily dressed Italian dinner table: true, dry aged salumé; savory, long simmered tomato sauces; a hillock of heady truffles thinly shaved and mounded over butter tossed pasta… this is a foodie’s wine per eccellenza. From Barbera planted over 30 years ago to the Serraboella vineyard in the Neive municipality that borders Barbaresco, this ripens well in the Alba hills and once fermented rounds off any hard edges during its 12 month rest in Slavonian oak casks. Lofty scents of tarragon and lovage bring their delicate licorice notes and are fleshed out with the aromas of baked black cherries, marzipan and wisp of waxy vanilla bean. Soft tannins and ample acid structure these scents as they manifest as flavors on the palate filling the corners of the mouth and refreshing in with a sweet and sour cherry character all its own.

Tomato sauces on pasta or pizza especially spicy or meaty. Barbecued anything especially ribs and chicken. Burgers and brats.
