Elsa Cabernet Sauvignon 2019

Elsa Bianchi 2012 Cabernet Sauvignon, Mendoza | 14.1% | Mendozan vineyards are fortunate for their cool nights and bountiful sunshine for even ripening, their windy slopes that eliminate mildews, and the Andean snowmelt for just the right moisture to get the best character into each cluster of grapes which is why their varietal wines are copybook examples that ring with typicity. This Cabernet Sauvignon is just what one hopes to find: brambly black currants and blackberries a woodsy cedar cigar box high note and a cracked pepper low note, it has enough tannins for presence but is soft enough to simply sip. It comes on strong but proves a gentle giant.

Meat, meat, meat but especially lamb and beef. Game birds, duck, goose, squab. Anything with lots of rosemary.
