Blanchet Pouilly-Fume Silice 2011

Good lord! This is smoking Pouilly-Fumé on the nose. Silice soils [those sandy clay soils that are rich in slate] verily speak through this Pouilly Fumé … stony, flinty and limey, it has an absolutely lovely nose. Much like the Yang to the Ying of Blanchet’s plumper Calcite, the Cuvée Silice is an angsty darling on the palate: in some ways like a little stark and edgy with the mineral driven texture and gun-flint finish. Among my dream wines for the briny and snappy oysters of the eastern seaboard, this is an immensely appetizing aperitif. Oysters…

White fish, shellfish, oysters, chicken. Asparagus, cilantro, artichokes, salads. Lemony or garlicy things.
