Cauhape Jurancon Moelleux Ballet d'Octobre 12/375 2011

Ballet d’Octobre, is a beautiful example of Moelleux Jurançon –and among the great food pairing wines for foie gras, crisp fried foods, rich terrines or fruit tarts and pastries. Made from 70% Gros Manseng and 30% Petit Manseng harvested at their ripened prime in late October, Domaine Cauhapé’s Ballet d’Octobre, shows what this southeasterly parcel of flinty clay against the Great Pyrenees has done for the world –a lovely, gently honeycombed white of subtle sweetness, and hints of gingerbread, poised balance, poached apricots and the summer fruit that would pair so well with this.
