Cline Cabernet Sauvignon 2018

2018 Cabernet Sauvignon is a unique blend of Sonoma County and Contra Costa County fruit. On the nose you are greeted with aromas of blackberry and toast. Rich flavors follow, with blackberry currant and notes of olives, herbs and toasty oak. Pair this wine with full-bodied foods such as a grilled steak or portabella mushroom.

SUSTAINABLY FARMED VINEYARDS
Three vineyards supply the fruit for this wine. The Sonoma grapes come from a well-drained hillside vineyard on Sonoma Mountain. Cool evenings and warm days allow this fruit to ripen to perfection and retain good natural acidity. The balance of the fruit comes from two flat-land vineyards of Contra Costa County. The soils in these vineyards are clay loam and the vineyards benefit from warm days and cool nights.

FERMENTATION & AGING
Grapes were handpicked at the peak of ripeness, underwent total destemming and a very gentle crushing to ensure a large proportion of whole berries were left in the must. Fermentation occurred in stainless steel tanks with native yeasts, and was maintained at the ideal temperature to aid in the extraction of flavor and color. The wine was pressed off its skins at dryness before being racked to lightly-toasted American Oak (50% new) where it gently aged for 8 months.

VINEYARDS CONTRA COSTA COUNTY:
The Salluci Vineyard, located in the small town of Knightsen and planted in 1985, contributes 54% to this Cab. The vineyard sits on the valley floor in well-drained, mixed soil of sand and loam, and planted on a quadra-lateral trellising system. Abundant sunshine and warm days ripen the fruit while evening breezes from the Sacramento Delta cool the grapes to retain their fresh acidity.

SONOMA COUNTY:
The Gordenker Vineyard (pictured above) provides the balance of the grapes for this Cab and sits at the base of the Mayacamas Mountain range that separates Sonoma from Napa. The vineyard is close planted on a southwest facing slope, in low organic matter, heavy red clay and straight into the bedrock of volcanic andesite and basalt. Vines are trained to a 2-cane vertical shoot position, struggle through the growing period, and ripen extremely late in the season. The blending of Contra Costa County fruit contributes excellent tannin concentration and bright, ripe berry flavors while the fruit from Sonoma adds deep color, savory spice, vanilla and blueberry notes. The result: a beautifully layered Cabernet.
