Don Arturo Brut Cava, Penedès, Spain | 12% | Aged on their lees in the same tradition embraced in Champagne, Don Arturo cellar ripens this Brut in Sant Sadurní d'Anoia in Catalonia’s Alt Penedès –the center of Cava production. A blend of Macabeu, Xarel-Lo and Parellada this matures on its lees in bottle until disgorged to release a fragrant sparkling wine with lofty floral notes and a base line of wildflower honey. Bright and balanced, the palate is invigorating with a lime citrus lift and plenty of fruit character to follow with a fine bead and persistent textural mousse. A delightful apéritif, cocktail sparkler, or a natural with fresh fish, crustaceans, white –and even red meat. Sparkling after all is the all-powerful wine for food pairing.
