William Fèvre 2012 Champs Royaux Chablis | 12.5% | A hidden gem and a remarkable taste of Chablis, Fèvre’s Champ Royaux is a lovely little treat made with a core of estate fruit blending in up to 50% of purchased fruit from committed friends in the region. A wine made by Chablisienne friends for all the rest of us friends. I marvel at this wine for its fragrant lemon peel dynamism and the limestone minerality that drives this alert and bright eyed Chardonnay a la Chablis. True to the region and the crisp, pure lines that mark the house of Fèvre, Champs Royaux whets the palate and makes the mouth water as only Chablis does with a punchy structure, an ethereal charm of citrus and orchard fruit and an echoing –daresay ricocheting finish that repeats ”Chablis! …Chablis! …Chablis! …” as wines of place can and should. To taste a throbbing Chablis that pulses its terroir at this tier is outstanding and worth snapping up en masse.
