Girardin Bourgogne Rouge Cuvee St Vincent Pinot Noir 2018

100% Pinot Noir from 45 years old vines planted to the clay and limestone of the Côte de Beaune. Outstanding little Burgundy that proves an impressive appellation Bourgogne for all its spice, polished texture and subtle fragrance -no doubt thanks in large part to its strict triple sorting, gentle pressing and its natural fermentation from the ambient yeasts aloft in the Côte de Beaune that settle on the bloom of each grape -this is a pure glimpse onto the clarity of Côte de Beaune red Burgundy.

Only 10% of the large 500 liter barrels are made up of new oak so the ten months in cask are sure to honor the terroir's telling aromas and flavor without gilding the lily as it were. For those keeping tabs on just how sensitive viciculture practices can be it must be mentioned that this wine is even blended and bottled according to the lunar calendar on a Biodynamic Fruit Day. What's that? Think of this as going the extra mile to ensure at every stage an appellative Burgundy that is far more representative than its peers -and still it goes for a song!
