A lovely meringue of pear drops and mandarin peels lends to its immediate appeal as does a fine creamy texture balanced by a mineral note and a wisp of fresh thyme this makes for a charming wine –a complete wine, of remarkable depth for what many mistake as a coquettish category. Prosecco is never onerous or demanding. It was born to be playful, easy and refreshing. A hint of residual sugar may even make this off-dry and lift its fruit to a fragrant bouquet but this has more than mere good looks and a sweet demeanor. Prosecco like this is generous and plays-well-with-others especially dishes with savory spice, a little heat, a delicate sweet broth or those involving fruit. A Prosecco to share soon and often.
