Domaine Eden Cabernet Sauvignon 2011

Domaine Eden 2010 Cabernet Sauvignon, Santa Cruz | 13.5% | 75% Cabernet Sauvignon, 14% Merlot, 6% Cabernet Franc, 4% Petit Verdot and 1% Malbec. Dry farmed from the hillside vineyards around Saratoga and Los Gatos, these vines ripen as every vintner dreams: high above the Santa Clara Valley in the Santa Cruz Mountains, according to their sustainable methods so the fruit comes into the winery in prime condition. Unfined, unfiltered, and fermented with native yeasts, this Claret-like Cabernet based blend spends two years in French oak casks for all its cassis, fragrant currant leaf, and earthen core to come together into a complete whole and impress without brawn is heard without have need to raise its voice –a memorable mellifluous voice.

Meat, meat, meat but especially lamb and beef. Game birds, duck, goose, squab. Anything with lots of rosemary.
