Cabernet Sauvignon produces wines of intensity and depth of flavour. Classically, these flavours are cassis, plum, black cherry and anise. Herb, olive, mint, tobacco and cedar are often associated with Cabernet Sauvignon wine, as well. Many corners in the world can play along with this Noble Variety but few can crank it up like Australia where Cabernet Sauvignon seems as riper, sweeter, bolder, more immediate and ready to get down. Many elude such pigeon holes but on the whole, Aussie Cab is full-on, forceful, densely rich, and yet easy to drink.

Food Pairings

Meat, meat, meat but especially lamb and beef. Game birds, duck, goose, squab. Anything with lots of rosemary.
