La Vieille Ferme Rose 6/1500 2016

Situated on the slopes of Mont Ventoux, the vineyard benefits from a cooler climate than down in the plain. The grapes mature slowly and maintain a good acidity level. The wine is rich, fresh and balanced.

Sediment left by the seas of the Tertiary period at the base of the chalky Mont Ventoux. Red Mediterranean soils originating from cretaceous hard chalk, calcareous debris and round stones from old alluvium.

Made of Cinsault, Grenache, and Syrah using the saignée method (French for bleed off), this rosé is born of bleeding off some of the partially colored wine from a tank of what is bound to be red but hasn't yet spent the time on its skins enough to extract more than a rosé color. This not only concentrates the remaining red but yields a nice rich rosé to boot!

Beautiful pink and red tones mark the color. The nose is floral with hints of aniseed and brown sugar that give way to aromas of white flowers, cherries and fruit drops on the palate.

Food Pairings

Steaks, pasta with meat sauces, sausages the spicier the better. Barbecued ribs or chicken. Burgers and brats.
