Ponsot Chapelle-Chambertin 2011

Grand Cru of the highest order from a densely planted parcel (4,850 plants per acre) of limestone and clay this wine is grown from a 1.73 acre plot planted in 1990 and thereafter tended according to sustainable, organic and biodynamic viticulture and enology. Minimal intervention is de rigueur so nothing stands between us and the pristine Grand Cru terroir. Manually harvested into wicker baskets and then gently pressed in a 1945 vertical press employing neither lab yeast nor enzyme, neither chaptilization nor acidification. Aged in old oak barrels (5 to 50 years old) and gently racked after malolactic fermentation, Champelle-Chambertin is then blended under nitrogen and never fined, filtered or subject to even the smallest addition of SO²...this is ready to approack from 2015 but will evolve through 2045.
