Ah! Sauvignon Blanc as only Sancerre can do –as only the Prieurs can foster: High toned limes and nectarines make you sit up and take notice. Both bright and mineral with bursts of citrus on the palate, this is thoroughly pleasing and completely engaging with a juniper berry top note and evergreen herbal qualities that call your mind from that previous sip into the action of another sip and another and another. This reminds one why Sancerre is essential for bright, tangy foods and surely a place worth a pilgrimage if you adore Sauvignon Blanc. A nicely ripened vintage could be just the segue for your reluctant friends into the mineral world of great Sancerre.

White fish, shellfish, oysters, chicken. Asparagus, cilantro, artichokes, salads. Lemony or garlicy things.
