Before I even try to lure you into uncharted waters, to answer your first question, this is far easier to say than one might think: Cho-MEEN Eh-chah-NEES, Gay-tah-ree-ah, Gay-tah-ree-ah-ko Cha-ko-LEEN-ah. Now onto its juicy bits: this pale yellow-green white is bright, citric and briny. Snappy and invigorating, this is just a touch pétillant which with its mouthwatering acidity practically defines an ideal apéritif wine as it is as fresh as a squeeze of lemon. Ah the legendary white of Basque country …and it must be shared that Kevin Sexton makes a fine point, “at 10.5% you could drink this all day all Summer long.”
