Drouhin Chablis Vaudesir 6/750 2015

Drouhin 2009 Chablis Grand Cru "Vaudésir" | This particular wine, tasted at this particular time (Fall of 2014) just goes to show how great Chablis holds up in its evolution. The color is golden straw, but with star bright edges that imply kicking youth. The aroma is loaded with a citrus meets ripe fruit complexity with little in the middle … fascinating stuff. On one side: talc, mineral, wet limestone, heat dried clay. On the other side: pineapple, McIntosh apple, and underripe honeydew melon. The play between these two sides are phenomenal. Better yet is the taste: full but grippy, with a lemon drop center point that keeps that acids and ripeness revolving. As with any great Chablis, it shape shifts ever so slightly as it gets air and warms up. Spectacular.
