Girardin Santenay Blanc Clos de Tavannes 2010

Biodynamic | In the south of the Cote d'Or, north of Gravieres in Santenay and just south of Chassagne-Montrachet rests the Premier Cru Clos de Tavannes from which Vincent Girardin crafts this exceptional Chardonnay rich in the lifted scents of tangerines and grounding apricots. In the mouth one can practically taste the mineral from low yielding vines planted to clay marl soils that set this parcel apart in a flinty character that could well define dry extract. Nervy acids and a rounded texture prove twelve months in barrel helped tame this racy Chardonnay into a polished and creamy white of orchard fruit, freshly chopped fennel, and an almost Chablisienne sort of cut and punch together with the sapid charms of Chassagne-Montrachet. A wine that turns you on your heel and smiles "look at me and adore me" in a way one cannot but help.

From 55 years old vines located in the Santenay Village area, in the south of the Côte de Beaune. The "Clos de Tavannes” vineyard is just near the famous 1er Cru Les Gravières and on the boarder with the village of Chassagne. The soils here are comprised of clay and limestone. The subsoil is composed of different limestone layers (pebbles, marly soils). The slope is quite strong. This is naturally 100% Chardonnay pruned Guyot and harvested by hand and sorted out when picking the grapes. After whole pressing, cold settling and gentle racking, the wine is put in French oak casks (15% of new oak) of 500 liters named "demi-muids”. The primary and malolactic fermentations can then begin with wild yeasts.

The ageing is long on fine lies during 14 months. A month before the bottling, the wine from the different barrels is put in a stainless steel tank to make the blend. The wine is finally fined and gently filtered before bottling it following the lunar calendar ("fruit” day to get a wine on freshness and minerality).

The whites are dry and full-bodied. A fleshy wine with notes of dried and preserved fruits and honey combined with a nice acidity level which brings a nice balance and a good mineral length.
