Hakutsuru Plum Wine
Admired for its fruity and floral fragrance and much loved by drinkers that do not typically enjoy the flavour of alcohol, umeshu is a Japanese original made by steeping ume [Japanese plums] in shochu [a distilled spirit made in Japan]. Since the ume are green when this process begins, the “plum wine” has the best of both fresh and well ripened plums one in which sweet and sour intermingle and the fragrance is both primary and bold. Tasty over rocks with fried foods, umeshu is also nice when heated making a great winter beverage to greet you when coming in from the cold. Many mixologists of our classic cocktail renaissance find umeshu an invaluable asset among their chest of tools. Whatever your purpose, umeshu belongs in your cabinet as a delightful drink to have on hand.
