Juve & Camps Cava Rose

As if onomatopoeia played a role in its naming, Cava is both percussive and vibrant. This classic Catalonian sparkling wine is delightful for its invigorating effervescence, crisp acidity and panoply of flavours stretching from citric and pastry to earthy and mineral. Crafted in the traditional method which requires secondary fermentation to occur in bottle and insists that the wine is aged on its lees, Cava shows more nuance than other sparklers of similar price. Although Macabeo [aka Viura in Rioja] is rather neutral, light bodied Parellada is elegant and adds grace, while Xarel-lo lends an earthen quality that contributes to Cava’s growing reputation as well as the wines subtle variations.
