Cabernet Franc is matchless for its unique fragrance and alluring charms and yet it's a sleeper among the noble varieties (the great vitis vinifera); perhaps for its crucial but minority role in Bordeaux Blends. Yet the cooler inland climate of the Loire shows how Chinon and Saumur-Champigny of the Touraine can foster from Cabernet Franc wines of all the greatest floral fruit and herbal nuances that make this a wine for those that have tried them all and tired of the common renditions of old standards. Lighter bodied and higher in fruit acids these are the wines of Parisian bistros; versitile, charming food wines.

Food Pairings

Red Saumur is best enjoyed at 57°F with red meat, game, poultry and cheese. It is now increasingly popular with certain seafood dishes and as an accompaniment to oriental cuisine. It can be served chilled throughout the meal.
