Drouhin Chablis Domaine Vaudon 2009
Another phenomenal glimpse onto the hedonism of Burgundy’s 2009 vintage, this is a generous taste of Chablis according to the Drouhins’ vigilant viticulture and the care in the winery. Farmed entirely Biodynamic, these vines are among the healthiest to be found in all of Chablis –and certainly among the most mineral in each of their categories. In this case I enjoy clear citrus blossoms, nectarines and meringue on the nose and bright, snappy minerals on a palate that echo with waxy talc and texture through the finish. What I wouldn’t give for an afternoon alone with this wine and a heaping stack of oysters to shuck. Any month with an "R" they say...
