Kamoizumi Nigori Sake Summer Snow 12/500 - JS1056
Rare to find a Nigori that is Ginjo grade nor is it common to find such a shining example that is also nama meaning it has not been pasteurized twice as most sakes (once at the time of brewing and again after winter storage). This is premium Nigori with its snow storm of cloudy sediment lending a leesy character in a rustic sense –this is more country and more ancestral in that until very recently the kura (the sake breweries) of Japan did not have the technology to fine and filter sediment out. Instead they would wrap the rice in finer and finer cloth in succession as they press their body weight against it. There’s a honeycomb, an ultra-fine suspended silt sort of texture lending all the more to the vichyssoise richness to this savory glass of sake. An exemplary Nigori of the highest order.
