Moris Farms Avvoltore 2007

Sangiovese 75%, Cabernet Sauvignon 20%, Syrah 5%
12 months in French barriques Tuscany’s homegrown Sangiovese comes together with the French Cabernet and Syrah, in ways only the warm corner of Maremma can achieve. Above all its other many merits is a beguiling fragrance unique to the Avvoltore –the flagship of Moris Farms. Woodsy duff and fragrant of pine forests, this balances all the ripe Cabernet Sauvignon, the nervy Sangiovese, and the meaty Syrah. Like ropes on the Cerynian Hind, words fail to capture this wild beast of the arboreal hills of Maremma.

planted to clay, rich in fossils making the soil slightly acidic, Avvoltore combines the best production sites Moris tends: "Tenuta Poggetti", Massa Marittima, "Poggio all' Avvoltore." The harvest took place during the second and fourth weeks of September, dependant on the various varietals. Fermentation took place in temperature controlled cement tanks with the cap pumped
over twice a day during a period of maceration lasting 25 days.
Malolactic Fermentation took place in 225 litre barrels (80% new), followed by additional barrel aging for 12 months. The wine was racked once during this period. The wine was then bottled and allowed to rest for another six months prior to its market release. Ruby red with violet reflections, the color invites one into a bouquet that's complex with hints of mature fruits and vanilla. In the mouth Avvoltore 2007 is full bodied yet soft, suggesting a velvety sensation on the palate.

The 2007 Avvoltore, a blend of 75% Sangiovese, 20% Cabernet Sauvignon and 5% Syrah, is a stunner. All of the elements come together gracefully as this soft, sumptuous wine opens up to reveal multiple layers of fruit, refined tannins and exceptional harmony that all leave lasting impression. Power, weight and intensity are balanced beautifully in a soft, seamless style that is impossible to resist. This is a fabulous vintage of Avvoltore.

Seriously anything tomatoey sings with Sangiovese, pizza and pasta to be sure. Sausages, chicken, gazpacho. Bread salad.
