Ponsot Chambolle-Musigny Cigales 6/750 2009

In 1965 Domaine Ponsot planted Pinot Noir to one acre of Chambolle Musigny's clay and limestone. In the fifty years since then, Domaine Ponsot has minded this plot with as much care as any vigneron could muster. Sustainable, Organic, and Biodynamic, this densely planted vineyard is veritably manicured by hand with only organic treatments and harvested into wicker baskets only once clusters are perfectly ripe. Fermented naturally without any lab yeasts, enzymes or added sulfur dioxide, this wine is made with only the ambient yeasts native to Chambolle Musigny, only sees old barrels from 5 to 50 years old, and is neither racked, fined nor filtered so the Cuvée des Cigales allows us a true glimpse at this gifted terroir -just the wine for saddle of hare under juniper sauce or roast white meat.
