Shaya Verdejo 2011
Grown from the original Spanish clones of 75 year old Verdejo vines, this goes through a wild yeast fermentation and is 25% barrel fermented. Chalky minerals meld with spices akin to nutmeg, fresh almonds in the form of marzipan and stone fruits –white cherries and floral notes –that come together in a fragrant billowing finish.
